ChocyNana Mini Muffins

These delightful ChocyNana Mini Muffins are an absolute favourite in our house.  The kids think they're winning having chocolate muffins, and I AM winning getting some goodness into them - double win!!  So simple and fast to make, they'll become your new favourite go-to recipe.

Ingredients

  • 1 3/4 cups self-raising flour, sifted (can also use wholemeal flour)
  • 1/4 cup cocoa powder/cacao
  • 3/4 cup firmly packed brown sugar
  • 1 egg, beaten lightly
  • 3/4 cup low-fat vanilla yoghurt
  • 1/2 cup mashed banana
  • 1/3 cup vegetable oil
  • 18 dark chocolate buttons, halved

Instructions

Step 1:
Preheat oven to 200°C.  Line 36 mini-muffin holes with paper cases or grease lightly with cooking spray.  
 
Step 2:
Combine flour, cocoa and sugar in a large bowl.  Add egg, yogurt, banana and oil.  Stir until just combined.
 
Step 3:
Divide mixture among paper cases. Press a chocolate button half into each muffin.
 
Step 4:
Bake for 15 minutes, or until an inserted skewer comes out clean. Transfer to a wire rack to cool.
 

Tips

  • I like to press the chocolate button-half firmly into the muffin, that way little fingers can't just pick off the chocolate and discard the muffin (my little man loves to eat only the icing given the chance).
  • They are perfect to throw in air-tight containers or bags in the freezer, and pull out as you need them.  I put them into the lunch boxes frozen in the morning and they are defrosted and fresh at morning tea.
  • Try using different flavour low-fat yogurt for a little twist on the muffins - strawberry & mixed berry go really well with the banana.
